I ate squirrel. Yes, I ate a rodent and liked it! We didn’t follow a recipe. Quentin cleaned them up and into the dutch oven they went. We let them cook in the oven at 250º for about 5 hours. That was long enough for them to become tender and start to fall off the bones.

001Then we piled on lots of veggies. Potatoes, carrots, onions, and peppers. The oven temperature was raised to 350º, and in about an hour the potatoes were done, and it was time to eat.
